For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup key lime juice, freshly squeezed
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Lime zest for garnish
Instructions
1. Prepare the Crust:
- In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press about 2 tablespoons of the mixture into the bottom of each cup of a 12-cup muffin tin lined with paper liners.
- In another bowl, whisk together sweetened condensed milk and key lime juice until smooth and thickened. Spoon this filling evenly over the crust in each cup.
- In a chilled bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Pipe or spread the whipped cream over the filling in each cup.
- Refrigerate the mini pies for at least 4 hours or until set. Garnish with lime zest before serving.
