These delightful mini key lime pies are creamy, tangy, and require no baking, making them a perfect easy dessert for any occasion.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice, freshly squeezed
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Lime zest for garnish

Instructions

1. Prepare the Crust:

  1. In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press about 2 tablespoons of the mixture into the bottom of each cup of a 12-cup muffin tin lined with paper liners.
  2. In another bowl, whisk together sweetened condensed milk and key lime juice until smooth and thickened. Spoon this filling evenly over the crust in each cup.
  3. In a chilled bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Pipe or spread the whipped cream over the filling in each cup.
  4. Refrigerate the mini pies for at least 4 hours or until set. Garnish with lime zest before serving.
