For the Crust:
- 1 lb potato gnocchi
- 2 cups cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sautΓ© for 1 minute until fragrant.
- Add cherry tomatoes, dried basil, red pepper flakes, salt, and black pepper. Cook for 5 minutes until tomatoes soften.
- Stir in gnocchi and spinach, cooking for another 5 minutes until spinach wilts and gnocchi is tender. Sprinkle mozzarella on top, cover, and let melt for 2 minutes before serving.
