For the Crust:

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add orzo to the skillet and toast for 2-3 minutes, stirring frequently, until lightly golden.
  3. Pour in vegetable broth and bring to a simmer. Cook for 8-10 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
  4. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  5. Reduce heat to low and stir in heavy cream and grated Parmesan cheese until creamy and well combined. Season with salt, black pepper, and red pepper flakes if using. Serve immediately.
