Ingredients
Scale
For the Crust:
- 1 large pineapple, peeled, cored, and sliced
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1 cup heavy cream
- 1 cup grated coconut
- 1 packet (200g) Maria cookies or similar tea biscuits
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup water
Instructions
1. Prepare the Crust:
- In a saucepan, combine pineapple slices, sugar, and water. Cook over medium heat until pineapple is tender and slightly caramelized, about 10 minutes. Let cool.
- In a blender, combine sweetened condensed milk, evaporated milk, heavy cream, and vanilla extract. Blend until smooth and creamy.
- In a serving dish, layer Maria cookies, followed by a layer of cooked pineapple, a layer of the white cream, and a sprinkle of grated coconut. Repeat layers until all ingredients are used, ending with cream and coconut on top.
- Refrigerate for at least 4 hours or overnight to allow flavors to meld and cookies to soften. Serve chilled.
