For the Crust:

  • 2 ripe pears, thinly sliced
  • 1 large apple, thinly sliced
  • 1/2 cup dried cranberries
  • 4 oz feta cheese, cut into snowflake shapes (use small cookie cutters)
  • 6 cups mixed greens (e.g., arugula, spinach)
  • 1/4 cup chopped walnuts, toasted
  • For the dressing: 3 tbsp olive oil, 2 tbsp fresh lime juice, 1 tbsp honey, salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the mixed greens, sliced pears, sliced apples, dried cranberries, and toasted walnuts.
  2. In a small jar or bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Arrange the salad on a serving platter and top with the feta snowflakes, placing them decoratively across the top.
