A festive winter salad featuring crisp pears, apples, and dried cranberries, topped with creamy goat cheese snowflakes and a tangy maple vinaigrette.

For the Crust:

  • 6 cups mixed winter greens (such as kale, spinach, and arugula)
  • 1 ripe pear, thinly sliced
  • 1 apple, thinly sliced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts, toasted
  • 4 oz goat cheese, chilled
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the mixed greens, sliced pear, sliced apple, dried cranberries, and toasted walnuts.
  2. In a small jar, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper to make the vinaigrette.
  3. Drizzle the vinaigrette over the salad and toss gently to coat all ingredients evenly.
  4. Using a small spoon or cheese knife, scoop small pieces of chilled goat cheese and arrange them on top of the salad to resemble snowflakes.
  5. Serve immediately and enjoy the fresh, seasonal flavors.
