For the Crust:
- 6 cups mixed winter greens (such as kale, spinach, and arugula)
- 1 ripe pear, thinly sliced
- 1 apple, thinly sliced
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts, toasted
- 4 oz goat cheese, chilled
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the mixed greens, sliced pear, sliced apple, dried cranberries, and toasted walnuts.
- In a small jar, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper to make the vinaigrette.
- Drizzle the vinaigrette over the salad and toss gently to coat all ingredients evenly.
- Using a small spoon or cheese knife, scoop small pieces of chilled goat cheese and arrange them on top of the salad to resemble snowflakes.
