For the Crust:
- 2 medium sweet potatoes, peeled and cubed
- 1 ripe pear, thinly sliced
- 1 apple, thinly sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh mint
- 1 cup plain Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 4 cups mixed greens
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tablespoon olive oil, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
- In a small bowl, whisk together Greek yogurt, chopped mint, honey, and remaining olive oil to make the dressing. Season with salt and pepper.
- Arrange mixed greens on a large platter. Top with roasted sweet potatoes, sliced pear, sliced apple, chickpeas, and dried cranberries.
- Drizzle the mint yogurt dressing over the salad just before serving. Gently toss to combine if desired.
