A festive, colorful salad featuring roasted sweet potatoes, fresh fruits, chickpeas, and a refreshing mint yogurt dressing, perfect for holiday gatherings.

For the Crust:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 ripe pear, thinly sliced
  • 1 apple, thinly sliced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh mint
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 4 cups mixed greens

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tablespoon olive oil, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. In a small bowl, whisk together Greek yogurt, chopped mint, honey, and remaining olive oil to make the dressing. Season with salt and pepper.
  3. Arrange mixed greens on a large platter. Top with roasted sweet potatoes, sliced pear, sliced apple, chickpeas, and dried cranberries.
  4. Drizzle the mint yogurt dressing over the salad just before serving. Gently toss to combine if desired.

You can customize the seasonings to taste.
