A festive and creamy cheese log studded with sweet pineapple and tart cranberries, perfect for holiday gatherings.

For the Crust:

  • 8 oz cream cheese, softened
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup chopped pecans
  • 2 tablespoons green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for coating)

Instructions

1. Prepare the Crust:

  1. In a medium bowl, combine softened cream cheese, crushed pineapple, dried cranberries, pecans, green onions, garlic powder, and black pepper.
  2. Mix until all ingredients are well incorporated and the mixture is smooth.
  3. Shape the mixture into a log on a sheet of plastic wrap, then wrap tightly and refrigerate for at least 2 hours or until firm.
  4. Unwrap the cheese log and roll it in chopped parsley until evenly coated.
  5. Serve with crackers or sliced baguette.
