For the Crust:
- 8 oz cream cheese, softened
- 1/2 cup crushed pineapple, drained
- 1/4 cup dried cranberries, chopped
- 1/4 cup chopped pecans
- 2 tablespoons green onions, finely chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (for coating)
Instructions
1. Prepare the Crust:
- In a medium bowl, combine softened cream cheese, crushed pineapple, dried cranberries, pecans, green onions, garlic powder, and black pepper.
- Mix until all ingredients are well incorporated and the mixture is smooth.
- Shape the mixture into a log on a sheet of plastic wrap, then wrap tightly and refrigerate for at least 2 hours or until firm.
- Unwrap the cheese log and roll it in chopped parsley until evenly coated.
- Serve with crackers or sliced baguette.
