A playful twist on the classic — where warmth meets icy elegance. Golden, nutty pistachio pairs with refreshing frozen lemon for a delightful contrast.


Ingredients

For the Crust:

  • 1 cup shelled pistachios
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 cup heavy cream
  • 2 tbsp honey
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a food processor, blend pistachios, sugar, and water until a smooth paste forms.
  2. In a separate bowl, whip heavy cream with honey and vanilla until soft peaks form.
  3. Fold in lemon juice, zest, and salt gently into the whipped cream mixture.
  4. Layer pistachio paste and lemon cream in serving glasses, alternating for a marbled effect.
  5. Freeze for at least 4 hours or until set.
