Description

A festive and elegant cheese log coated in crunchy pistachios and sweet cranberries, drizzled with honey and fresh rosemary.


Ingredients

For the Crust:

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup shelled pistachios, chopped
  • 2 tbsp honey
  • 1 tsp fresh rosemary, finely chopped
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. In a medium bowl, combine cream cheese, cheddar cheese, salt, and pepper. Mix until well blended.
  2. Stir in half of the chopped cranberries and half of the chopped pistachios until evenly distributed.
  3. Shape the mixture into a log on a sheet of plastic wrap, then wrap tightly and refrigerate for at least 1 hour to firm up.
  4. On a plate, mix the remaining pistachios and cranberries. Unwrap the cheese log and roll it in the nut and cranberry mixture, pressing gently to coat.
  5. Drizzle the log with honey and sprinkle with fresh rosemary before serving.

Notes

You can customize the seasonings to taste.
