A festive and elegant cheese log coated in crunchy pistachios and sweet cranberries, drizzled with honey and fresh rosemary.

For the Crust:
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup dried cranberries, chopped
- 1/2 cup shelled pistachios, chopped
- 2 tbsp honey
- 1 tsp fresh rosemary, finely chopped
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- In a medium bowl, combine cream cheese, cheddar cheese, salt, and pepper. Mix until well blended.
- Stir in half of the chopped cranberries and half of the chopped pistachios until evenly distributed.
- Shape the mixture into a log on a sheet of plastic wrap, then wrap tightly and refrigerate for at least 1 hour to firm up.
- On a plate, mix the remaining pistachios and cranberries. Unwrap the cheese log and roll it in the nut and cranberry mixture, pressing gently to coat.
- Drizzle the log with honey and sprinkle with fresh rosemary before serving.
