For the Crust:
- 1 (8 oz) wheel of brie cheese, cut into 1-inch cubes
- 1 cup shelled pistachios, finely chopped
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/4 cup honey
- 2 dried figs, finely chopped
- 1 tbsp water
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil for frying
Instructions
1. Prepare the Crust:
- In a small saucepan, combine honey, chopped figs, and water. Heat over low, stirring until figs soften and mixture thickens slightly, about 5 minutes. Set aside.
- Set up a breading station: place flour in one shallow bowl, beaten eggs in another, and chopped pistachios mixed with salt and pepper in a third.
- Dredge each brie cube in flour, then dip in egg, and finally coat thoroughly in the pistachio mixture.
- Heat olive oil in a skillet over medium heat. Fry brie bites until golden on all sides, about 2-3 minutes total. Work in batches to avoid crowding.
- Transfer bites to a paper towel-lined plate to drain. Drizzle with fig honey glaze and serve warm.
