For the Crust:
- 1 (8 oz) wheel of brie cheese, chilled
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup pomegranate molasses
- 1 tbsp honey
- 1 tsp fresh thyme leaves
- 1/4 tsp black pepper
- 2 tbsp all-purpose flour
- 1 large egg, beaten
- 2 tbsp olive oil
- Fresh thyme sprigs for garnish
Instructions
1. Prepare the Crust:
- Cut the chilled brie into 1-inch cubes, and lightly coat each piece in flour.
- Dip each brie cube into the beaten egg, then roll in chopped pistachios until fully coated.
- Heat olive oil in a skillet over medium heat. Pan-fry the brie bites for 1-2 minutes per side, until golden and slightly softened.
- In a small saucepan, warm the pomegranate molasses and honey over low heat until combined.
- Arrange the brie bites on a serving platter, drizzle with the pomegranate glaze, and sprinkle with fresh thyme leaves and black pepper.
- Garnish with thyme sprigs and serve immediately.
