Elegant, bite-sized appetizers featuring creamy brie coated in crunchy pistachios, drizzled with a sweet-tart pomegranate glaze, and garnished with fresh thyme.

For the Crust:

  • 1 (8 oz) wheel of brie cheese, chilled
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup pomegranate molasses
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1/4 tsp black pepper
  • 2 tbsp all-purpose flour
  • 1 large egg, beaten
  • 2 tbsp olive oil
  • Fresh thyme sprigs for garnish

Instructions

1. Prepare the Crust:

  1. Cut the chilled brie into 1-inch cubes, and lightly coat each piece in flour.
  2. Dip each brie cube into the beaten egg, then roll in chopped pistachios until fully coated.
  3. Heat olive oil in a skillet over medium heat. Pan-fry the brie bites for 1-2 minutes per side, until golden and slightly softened.
  4. In a small saucepan, warm the pomegranate molasses and honey over low heat until combined.
  5. Arrange the brie bites on a serving platter, drizzle with the pomegranate glaze, and sprinkle with fresh thyme leaves and black pepper.
  6. Garnish with thyme sprigs and serve immediately.
