Elegant, bite-sized goat cheese rounds coated in crunchy pistachios and drizzled with a sweet fig honey glaze—perfect for appetizers or entertaining.

For the Crust:

  • 1 log (8 oz) goat cheese, chilled
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 2 tbsp honey
  • 2 dried figs, finely chopped
  • 1 tbsp water
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Slice the goat cheese log into 1/2-inch thick rounds. If sticky, chill for 10 minutes.
  2. Place flour, beaten egg, and chopped pistachios in three separate shallow bowls. Season pistachios with salt and pepper.
  3. Dredge each goat cheese round in flour, dip in egg, then coat thoroughly in pistachios. Place on a parchment-lined plate.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook cheese bites for 1-2 minutes per side until golden and slightly softened.
  5. In a small saucepan, combine honey, chopped figs, and water. Simmer for 3-4 minutes until slightly thickened. Strain if desired.
  6. Arrange pistachio-crusted goat cheese bites on a serving platter and drizzle with warm fig honey glaze. Serve immediately.
