For the Crust:
- 1 sheet puff pastry (thawed)
- 4 oz goat cheese (softened)
- 2 tbsp honey (plus extra for drizzling)
- 1/3 cup shelled pistachios (chopped)
- 1 tsp lemon zest
- 1 egg (beaten, for egg wash)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry into a 10×12 inch rectangle. Spread the softened goat cheese evenly over the pastry, leaving a 1/2-inch border around the edges.
- Drizzle honey over the goat cheese, then sprinkle chopped pistachios and lemon zest evenly on top.
- Starting from the long side, tightly roll the pastry into a log. Slice into 1/2-inch thick pinwheels and place them on the prepared baking sheet.
- Brush the tops with egg wash and bake for 18-20 minutes, or until golden brown and puffed.
- Remove from oven, drizzle with additional honey, and serve warm.
