Description

Flaky puff pastry pinwheels filled with creamy goat cheese, crunchy pistachios, and a drizzle of honey for a sweet and savory appetizer.

For the Crust:

  • 1 sheet puff pastry (thawed)
  • 4 oz goat cheese (softened)
  • 2 tbsp honey (plus extra for drizzling)
  • 1/3 cup shelled pistachios (chopped)
  • 1 tsp lemon zest
  • 1 egg (beaten, for egg wash)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry into a 10×12 inch rectangle. Spread the softened goat cheese evenly over the pastry, leaving a 1/2-inch border around the edges.
  3. Drizzle honey over the goat cheese, then sprinkle chopped pistachios and lemon zest evenly on top.
  4. Starting from the long side, tightly roll the pastry into a log. Slice into 1/2-inch thick pinwheels and place them on the prepared baking sheet.
  5. Brush the tops with egg wash and bake for 18-20 minutes, or until golden brown and puffed.
  6. Remove from oven, drizzle with additional honey, and serve warm.

Notes

You can customize the seasonings to taste.
