For the Crust:
- 1 sheet puff pastry (thawed)
- 4 oz goat cheese (softened)
- 2 tbsp honey (plus extra for drizzling)
- 1/4 cup shelled pistachios (chopped)
- 1 tsp fresh thyme leaves
- 1 egg (beaten, for egg wash)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry into a rectangle and spread the softened goat cheese evenly over the surface.
- Drizzle honey over the goat cheese, then sprinkle chopped pistachios, thyme, salt, and pepper.
- Roll the pastry tightly into a log, then slice into 1-inch thick pinwheels.
- Place pinwheels on the baking sheet, brush with egg wash, and bake for 18-20 minutes until golden brown.
- Drizzle with additional honey before serving warm or at room temperature.
