For the Crust:

  • 1 sheet puff pastry (thawed)
  • 4 oz goat cheese (softened)
  • 2 tbsp honey (plus extra for drizzling)
  • 1/4 cup shelled pistachios (chopped)
  • 1 tsp fresh thyme leaves
  • 1 egg (beaten, for egg wash)
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry into a rectangle and spread the softened goat cheese evenly over the surface.
  3. Drizzle honey over the goat cheese, then sprinkle chopped pistachios, thyme, salt, and pepper.
  4. Roll the pastry tightly into a log, then slice into 1-inch thick pinwheels.
  5. Place pinwheels on the baking sheet, brush with egg wash, and bake for 18-20 minutes until golden brown.
  6. Drizzle with additional honey before serving warm or at room temperature.
