A decadent twist on a classic dessert featuring creamy layers of mascarpone, white chocolate, and pistachios.

For the Crust:
- 1 cup mascarpone cheese
- 1/2 cup white chocolate chips, melted
- 1/2 cup pistachios, chopped
- 1 cup heavy cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 package ladyfinger cookies
- 1 cup brewed coffee, cooled
Instructions
1. Prepare the Crust:
- In a bowl, whisk together mascarpone, melted white chocolate, and vanilla extract until smooth.
- In another bowl, whip the heavy cream with sugar until soft peaks form, then gently fold into the mascarpone mixture.
- Dip each ladyfinger briefly in the coffee and layer in the bottom of a serving dish. Spread half of the mascarpone mixture over the ladyfingers and sprinkle with half of the chopped pistachios. Repeat the layers, finishing with a topping of chopped pistachios and any remaining white chocolate shavings.
