A vibrant and refreshing salad featuring mixed greens, sweet pomegranate seeds, and pan-fried halloumi croutons, all tossed in a zesty spiced orange vinaigrette.

For the Crust:
- 6 cups mixed salad greens
- 1 cup pomegranate seeds
- 8 oz halloumi cheese, cubed
- 1/4 cup olive oil, divided
- 1/4 cup fresh orange juice
- 1 tbsp orange zest
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- 1/4 cup sliced almonds, toasted
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together orange juice, orange zest, honey, Dijon mustard, cumin, smoked paprika, salt, pepper, and 2 tablespoons olive oil to make the vinaigrette. Set aside.
- Heat remaining 2 tablespoons olive oil in a non-stick skillet over medium-high heat. Add halloumi cubes and cook, turning occasionally, until golden brown on all sides, about 4-5 minutes. Remove from heat and drain on paper towels.
- In a large salad bowl, combine mixed greens, pomegranate seeds, and toasted almonds. Drizzle with the spiced orange vinaigrette and toss gently to coat.
- Top the salad with the warm halloumi croutons and serve immediately.
