A vibrant and refreshing salad featuring mixed greens, sweet pomegranate seeds, and pan-fried halloumi croutons, all tossed in a zesty spiced orange vinaigrette.

For the Crust:

  • 6 cups mixed salad greens
  • 1 cup pomegranate seeds
  • 8 oz halloumi cheese, cubed
  • 1/4 cup olive oil, divided
  • 1/4 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup sliced almonds, toasted

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together orange juice, orange zest, honey, Dijon mustard, cumin, smoked paprika, salt, pepper, and 2 tablespoons olive oil to make the vinaigrette. Set aside.
  2. Heat remaining 2 tablespoons olive oil in a non-stick skillet over medium-high heat. Add halloumi cubes and cook, turning occasionally, until golden brown on all sides, about 4-5 minutes. Remove from heat and drain on paper towels.
  3. In a large salad bowl, combine mixed greens, pomegranate seeds, and toasted almonds. Drizzle with the spiced orange vinaigrette and toss gently to coat.
  4. Top the salad with the warm halloumi croutons and serve immediately.

Notes

You can customize the seasonings to taste.
