Description

This Raspberry Pistachio Yogurt Bark is a refreshing, protein-packed snack made with creamy Greek yogurt, sweet raspberries, and crunchy pistachios. Perfect for kids and adults alike!


Ingredients

2 cups plain Greek yogurt (whole milk or 2%)

3 tbsp honey or maple syrup

1 tsp pure vanilla extract

1 cup fresh raspberries (halved if large)

1/3 cup pistachios, chopped

2 tbsp mini dark chocolate chips (optional)


Instructions

1. Line a baking sheet with parchment paper.

2. In a bowl, mix Greek yogurt with honey and vanilla until smooth.

3. Spread yogurt mixture evenly on the prepared baking sheet, about 1/4 inch thick.

4. Scatter raspberries, pistachios, and chocolate chips (if using) evenly over the top.

5. Freeze for at least 3 hours, or until completely firm.

6. Break into pieces and serve immediately. Store leftovers in the freezer.

Notes

Use parchment paper for easy removal.

Swap pistachios with almonds, walnuts, or sunflower seeds.

Best enjoyed straight from the freezer—will melt if left at room temperature.
