Description

Elegant, layered stacks of roasted beets, creamy blue cheese, and sweet pear slices, drizzled with a tangy vinaigrette.


Ingredients

For the Crust:

  • 3 medium beets, roasted and peeled
  • 1 ripe pear, thinly sliced
  • 4 oz blue cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/4 cup arugula
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Wrap beets in foil and roast for 45-60 minutes until tender. Let cool, then peel and slice into rounds.
  2. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the vinaigrette.
  3. On a serving plate, layer beet slice, pear slice, and blue cheese. Repeat to form a tower. Drizzle with vinaigrette and garnish with arugula.

Notes

You can customize the seasonings to taste.
