For the Crust:
- 3 medium beets, roasted, peeled, and sliced into rounds
- 1 ripe pear, thinly sliced
- 4 oz blue cheese, crumbled
- 1/2 cup walnuts, toasted and chopped
- 1/4 cup balsamic vinegar
- 1 tbsp honey
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh arugula for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Wrap beets in foil and roast for 45-60 minutes until tender. Let cool, then peel and slice into 1/4-inch rounds.
- In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat until reduced by half and syrupy, about 5-7 minutes. Set aside to cool.
- On a serving plate, layer beet slices, pear slices, and blue cheese, repeating to form towers. Sprinkle with walnuts and drizzle with balsamic glaze and olive oil.
- Season with salt and pepper, garnish with fresh arugula, and serve immediately.
