Description

Tender roasted carrots served over creamy whipped ricotta and drizzled with spicy-sweet hot honey.


Ingredients

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup whole milk ricotta
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Spread carrots in a single layer on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
  3. While carrots roast, whip ricotta in a food processor or with a hand mixer until smooth and creamy.
  4. In a small saucepan, gently warm honey and red pepper flakes over low heat for 2-3 minutes to infuse.
  5. Spread whipped ricotta on a serving plate, top with roasted carrots, drizzle with hot honey, and garnish with fresh thyme.

Notes

You can customize the seasonings to taste.
