For the Crust:
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 cup whole milk ricotta
- 2 tbsp honey
- 1/2 tsp red pepper flakes
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread carrots in a single layer on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
- While carrots roast, whip ricotta in a food processor or with a hand mixer until smooth and creamy.
- In a small saucepan, gently warm honey and red pepper flakes over low heat for 2-3 minutes to infuse.
- Spread whipped ricotta on a serving plate, top with roasted carrots, drizzle with hot honey, and garnish with fresh thyme.
