Description

A refreshing salad featuring roasted peaches, crunchy pistachios, and creamy honey ricotta.


Ingredients

For the Crust:

  • 3 ripe peaches, halved and pitted
  • 1/4 cup pistachios, shelled
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • Mixed greens (arugula, spinach)
  • Olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Lightly brush the peaches with olive oil and place on a baking sheet.
  2. Roast the peaches in the oven for about 15 minutes until soft and slightly caramelized. Allow to cool.
  3. In a small bowl, combine ricotta cheese and honey. Mix until smooth.
  4. Arrange mixed greens on a serving platter. Top with roasted peaches and sprinkle with pistachios.
  5. Spoon dollops of honey ricotta over the salad and season with salt and pepper to taste.

Notes

You can customize the seasonings to taste.
