A refreshing salad featuring roasted peaches, crunchy pistachios, and creamy honey ricotta.

For the Crust:
- 3 ripe peaches, halved and pitted
- 1/4 cup pistachios, shelled
- 1 cup ricotta cheese
- 2 tablespoons honey
- Mixed greens (arugula, spinach)
- Olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Lightly brush the peaches with olive oil and place on a baking sheet.
- Roast the peaches in the oven for about 15 minutes until soft and slightly caramelized. Allow to cool.
- In a small bowl, combine ricotta cheese and honey. Mix until smooth.
- Arrange mixed greens on a serving platter. Top with roasted peaches and sprinkle with pistachios.
- Spoon dollops of honey ricotta over the salad and season with salt and pepper to taste.
