A vibrant and elegant salad featuring sweet roasted pears, fresh citrus segments, crispy toppings, creamy whipped feta, and a nutty honey drizzle.

For the Crust:

  • 2 ripe pears, cored and sliced
  • 1 orange, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 4 cups mixed greens (e.g., arugula, spinach)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1/4 cup shelled pistachios, chopped
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup pomegranate seeds for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss pear slices with olive oil, cinnamon, salt, and pepper. Roast on a baking sheet for 15-20 minutes until tender and lightly caramelized.
  2. In a food processor, blend feta cheese and Greek yogurt until smooth and fluffy to create whipped feta clouds. Refrigerate until ready to use.
  3. Arrange mixed greens on a serving platter. Top with roasted pears, orange segments, grapefruit segments, and pomegranate seeds.
  4. Dollop whipped feta clouds over the salad. Sprinkle with chopped pistachios.
  5. Drizzle honey over the salad just before serving. Toss gently if desired and enjoy immediately.
