Elegant roasted pear halves topped with melted brie, crunchy pistachios, and a fragrant rosemary honey drizzle. A perfect balance of sweet, savory, and aromatic flavors.

For the Crust:

  • 2 ripe but firm pears, halved and cored
  • 4 oz brie cheese, sliced
  • 1/4 cup shelled pistachios, chopped
  • 1/4 cup honey
  • 1 sprig fresh rosemary
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Place pear halves cut-side up on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  2. Roast pears for 15-20 minutes until tender. Remove from oven and top each pear half with sliced brie.
  3. Return to oven for 5-7 minutes until brie is melted and bubbly.
  4. Meanwhile, warm honey and rosemary in a small saucepan over low heat for 5 minutes. Remove rosemary sprig.
  5. Sprinkle roasted pear halves with chopped pistachios and drizzle with rosemary honey before serving.
