For the Crust:
- 4 ripe but firm pears, halved and cored
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1/4 cup crumbled blue cheese
- 1/4 cup shelled pistachios, roughly chopped
- 1 teaspoon fresh thyme leaves
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange pear halves cut-side up on a baking sheet.
- Drizzle pears with honey and olive oil, then sprinkle with a pinch of salt.
- Roast for 20-25 minutes, until pears are tender and lightly caramelized.
- Remove from oven and top each pear half with blue cheese and pistachios.
- Return to oven for 3-5 minutes, just until cheese begins to melt.
- Garnish with fresh thyme leaves and serve warm.
