Description

A vibrant and elegant side dish featuring sweet roasted rainbow carrots paired with creamy whipped burrata, crunchy pistachios, and fresh mint.

For the Crust:

  • 1 lb rainbow carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp honey
  • Salt and black pepper to taste
  • 8 oz burrata cheese
  • 2 tbsp heavy cream
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tbsp fresh mint leaves, chopped
  • 1 tsp lemon zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, salt, and pepper on a baking sheet.
  2. Roast carrots for 20-25 minutes, until tender and lightly caramelized.
  3. While carrots roast, whip burrata with heavy cream in a bowl until smooth and creamy.
  4. Spread whipped burrata on a serving platter, top with roasted carrots, and garnish with pistachios, mint, and lemon zest.

Notes

You can customize the seasonings to taste.
