For the Crust:
- 1 lb rainbow carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1 tsp honey
- Salt and black pepper to taste
- 8 oz burrata cheese
- 2 tbsp heavy cream
- 1/4 cup shelled pistachios, roughly chopped
- 2 tbsp fresh mint leaves, chopped
- 1 tsp lemon zest
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, salt, and pepper on a baking sheet.
- Roast carrots for 20-25 minutes, until tender and lightly caramelized.
- While carrots roast, whip burrata with heavy cream in a bowl until smooth and creamy.
- Spread whipped burrata on a serving platter, top with roasted carrots, and garnish with pistachios, mint, and lemon zest.
