For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 2 apples, cored and sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons maple syrup
  • 1/4 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes, apples, and red onion with olive oil, thyme, paprika, salt, and pepper.
  3. Spread mixture evenly on a baking sheet and roast for 25-30 minutes, until tender and lightly browned.
  4. Drizzle with maple syrup and sprinkle pecans over the top. Return to oven for 5 minutes.
  5. Serve warm as a side dish or over greens for a light meal.
