Description

A simple yet elegant side dish featuring roasted sweet potato rounds drizzled with honey and topped with crumbled feta cheese.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons honey
  • 1/2 cup crumbled feta cheese
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Arrange the rounds in a single layer on the baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and golden.
  4. Remove from the oven, drizzle with honey, and sprinkle with feta cheese. Return to the oven for 2-3 minutes to slightly melt the feta.
  5. Garnish with fresh thyme leaves and serve warm.
