For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons honey
- 1/2 cup crumbled feta cheese
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Arrange the rounds in a single layer on the baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and golden.
- Remove from the oven, drizzle with honey, and sprinkle with feta cheese. Return to the oven for 2-3 minutes to slightly melt the feta.
- Garnish with fresh thyme leaves and serve warm.
