This delectable dish combines the natural sweetness of roasted sweet potatoes with savory whipped feta and a spicy-sweet drizzle of hot honey, all topped with crunchy pistachios.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 1 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes
  • 1/4 cup shelled pistachios, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C).
  2. Place sweet potato rounds on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes or until tender and golden.
  3. While the sweet potatoes roast, blend feta cheese and Greek yogurt until smooth and creamy. Drizzle honey into a small saucepan, add red pepper flakes, and heat gently until infused.
  4. Arrange roasted sweet potatoes on a platter, top with whipped feta, drizzle with hot honey, and sprinkle with pistachios.
