For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds

- 1 cup feta cheese, crumbled
- 1/4 cup Greek yogurt
- 2 tablespoons honey

- 1/4 cup shelled pistachios, chopped
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C).
- Place sweet potato rounds on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes or until tender and golden.
- While the sweet potatoes roast, blend feta cheese and Greek yogurt until smooth and creamy. Drizzle honey into a small saucepan, add red pepper flakes, and heat gently until infused.
