For the Crust:
- 4 large ripe tomatoes, sliced 1/2-inch thick
- 8 oz fresh mozzarella cheese, sliced
- 1/4 cup fresh basil leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Arrange tomato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast tomatoes for 15-20 minutes until softened and slightly caramelized. Let cool slightly.
- On serving plates, layer roasted tomato slices, mozzarella slices, and basil leaves, repeating to form towers.
- Drizzle with balsamic glaze and additional olive oil if desired. Serve immediately.
