Elegant, flaky puff pastry bites filled with creamy Brie, drizzled with honey, and topped with rosemary and toasted almonds.

For the Crust:
- 1 sheet puff pastry, thawed
- 8 oz Brie cheese, rind removed and cut into small cubes
- 2 tbsp honey
- 2 tbsp sliced almonds, toasted
- 1 tsp fresh rosemary, finely chopped
- 1 egg, beaten (for egg wash)
- Flour for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a floured surface, roll out the puff pastry sheet. Use a snowflake-shaped cookie cutter to cut out shapes.
- Place half of the snowflake shapes on the baking sheet. Top each with a few cubes of Brie, leaving a border.
- Brush the edges with egg wash, then place the remaining snowflake shapes on top, pressing edges to seal.
- Brush the tops with egg wash, then sprinkle with rosemary and almonds. Bake for 12-15 minutes until golden and puffed.
- Remove from oven, drizzle with honey, and serve warm.
