For the Crust:
- 1 pre-made flatbread or pizza dough
- 4 oz goat cheese, crumbled
- 1/2 cup dried cranberries
- 1/4 cup honey
- 1 tbsp balsamic vinegar
- 1/4 cup sliced almonds, toasted
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place flatbread on a baking sheet and brush with olive oil.
- In a small saucepan, combine cranberries, honey, and balsamic vinegar over low heat. Simmer for 5-7 minutes until cranberries soften and mixture thickens slightly. Let cool.
- Spread the cranberry drizzle evenly over the flatbread, leaving a small border around the edges.
- Sprinkle crumbled goat cheese and toasted almonds over the top. Season with salt, pepper, and thyme.
- Bake for 10-12 minutes until the edges are golden and cheese is slightly melted. Slice and serve warm.
