For the Crust:
- 1 lb pizza dough, at room temperature
- 2 large yellow onions, thinly sliced
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- 1/2 cup dried cranberries
- 1 1/2 cups shredded Gruyère cheese
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Roll out pizza dough on a floured surface into a rustic oval or rectangle.
- Heat olive oil in a large skillet over medium-low heat. Add onions and cook, stirring occasionally, until deeply golden and caramelized, about 20-25 minutes. Stir in balsamic vinegar, salt, and pepper.
- Spread caramelized onions evenly over the pizza dough, leaving a small border around the edges.
- Sprinkle shredded Gruyère cheese over the onions, then scatter dried cranberries and fresh thyme on top.
- Bake for 12-15 minutes, or until crust is golden and cheese is bubbly. Let cool slightly before slicing and serving.
