For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 cup heavy cream
  • 1 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon sea salt
  • 1 1/2 cups pecan halves
  • 1/4 cup powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). In a food processor, combine flour, cold butter, and granulated sugar until mixture resembles coarse crumbs. Add egg yolk and pulse until dough forms.
  2. Press dough evenly into a 9-inch tart pan with removable bottom. Prick bottom with a fork and bake for 15 minutes or until lightly golden. Let cool.
  3. In a saucepan over medium heat, combine heavy cream, brown sugar, and butter. Stir until sugar dissolves and mixture thickens, about 10 minutes. Stir in sea salt.
  4. Arrange pecan halves over the cooled crust in a decorative pattern. Pour salted caramel over pecans, spreading evenly.
  5. Bake for 15 minutes or until caramel is bubbly. Let cool completely, then dust with powdered sugar using a snowflake stencil before serving.
