For the Crust:
- 2 large ripe tomatoes, sliced into 1/4-inch rounds
- 8 oz block of feta cheese, sliced into 1/4-inch squares
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh oregano, chopped
- 1 tbsp fresh mint, chopped
- 1 clove garlic, minced
- Salt and black pepper to taste
- Kalamata olives for garnish
Instructions
1. Prepare the Crust:
- Arrange a tomato slice on a serving plate, top with a feta slice, and repeat to build a tower of 3-4 layers.
- In a small bowl, whisk together olive oil, oregano, mint, garlic, salt, and pepper.
- Drizzle the herb olive oil generously over the tomato-feta tower.
- Garnish with Kalamata olives and additional herbs if desired.
- Serve immediately as a refreshing appetizer.
