For the Crust:
- 1 cup crushed crackers
- 4 tablespoons melted butter
- 16 ounces cream cheese, softened
- 1 cup sour cream
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup roasted red peppers, pureed
- Salt and black pepper to taste
- Fresh herbs for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix crushed crackers with melted butter and press into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth. Add sour cream, eggs, Parmesan, garlic powder, onion powder, salt, and pepper; mix until well combined.
- Pour half the cheesecake batter over the crust. Drizzle with half the roasted pepper puree, then top with remaining batter. Swirl remaining puree on top with a knife.
- Bake for 40-45 minutes until set but slightly jiggly in the center. Let cool completely before chilling for at least 4 hours.
- Garnish with fresh herbs, slice, and serve chilled.
