For the Crust:

  • 1 cup crushed crackers
  • 4 tablespoons melted butter
  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup roasted red peppers, pureed
  • Salt and black pepper to taste
  • Fresh herbs for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix crushed crackers with melted butter and press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese until smooth. Add sour cream, eggs, Parmesan, garlic powder, onion powder, salt, and pepper; mix until well combined.
  3. Pour half the cheesecake batter over the crust. Drizzle with half the roasted pepper puree, then top with remaining batter. Swirl remaining puree on top with a knife.
  4. Bake for 40-45 minutes until set but slightly jiggly in the center. Let cool completely before chilling for at least 4 hours.
  5. Garnish with fresh herbs, slice, and serve chilled.

Notes

You can customize the seasonings to taste.
