For the Crust:
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup dried cranberries, chopped
- 1/4 cup shelled pistachios, chopped
- 1/2 cup graham cracker crumbs
- 2 tbsp melted butter
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a bowl, mix graham cracker crumbs with melted butter and a pinch of salt. Press a spoonful into the bottom of each serving cup.
- In another bowl, beat cream cheese, sour cream, powdered sugar, and vanilla until smooth and creamy.
- Fold in chopped cranberries and half of the chopped pistachios.
- Spoon the cheesecake mixture over the crust in each cup, smoothing the top.
- Sprinkle remaining pistachios over the top. Chill for at least 2 hours before serving.
