Description

A luxurious twist on the classic tiramisu, featuring layers of savory mushrooms, creamy mascarpone, and a light parmesan cloud topping.


Ingredients

For the Crust:

  • 1 lb mixed mushrooms (cremini, shiitake, oyster), sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 egg white
  • 1 tbsp truffle oil (optional)
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a pan over medium heat. Add mushrooms and cook until golden brown, about 8 minutes.
  2. Add garlic and thyme to the mushrooms, cooking for another 2 minutes. Season with salt and pepper. Set aside to cool.
  3. In a bowl, whisk together mascarpone and heavy cream until smooth. Fold in half of the parmesan cheese.
  4. In a separate bowl, beat the egg white until stiff peaks form. Gently fold into the mascarpone mixture to create a light cloud texture.
  5. Layer the mushroom mixture and mascarpone cloud in serving glasses, finishing with a sprinkle of remaining parmesan and a drizzle of truffle oil if desired.
  6. Chill for at least 1 hour before serving to allow flavors to meld.
