Description

A delightful tart with a crunchy pistachio crust, creamy whipped feta, and sweet roasted sweet potatoes.


Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup ground pistachios
  • 1/2 cup cold butter, cubed
  • 1/4 cup ice water
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1/4 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix flour and ground pistachios. Cut in butter until crumbly. Add ice water to form a dough. Press into a tart pan.
  3. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 25 minutes until tender. Let cool slightly.
  4. Blend feta and heavy cream until smooth and whipped. Spread over the cooled crust.
  5. Top with roasted sweet potatoes. Serve warm or at room temperature.

You can customize the seasonings to taste.
