A delightful tart with a crunchy pistachio crust, creamy whipped feta, and sweet roasted sweet potatoes.

For the Crust:
- 1 cup all-purpose flour
- 1/2 cup ground pistachios
- 1/2 cup cold butter, cubed
- 1/4 cup ice water
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1/4 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C).
- In a bowl, mix flour and ground pistachios. Cut in butter until crumbly. Add ice water to form a dough. Press into a tart pan.
- Toss sweet potatoes with olive oil, salt, and pepper. Roast for 25 minutes until tender. Let cool slightly.
- Blend feta and heavy cream until smooth and whipped. Spread over the cooled crust.
- Top with roasted sweet potatoes. Serve warm or at room temperature.
