Description

Tender lamb koftas simmered in a creamy coconut tomato sauce infused with aromatic spices, served over fluffy steamed rice for a comforting and flavorful meal.

For the Crust:

  • 1 lb ground lamb
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 1 can (14 oz) diced tomatoes
  • 1 can (13.5 oz) coconut milk
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • Fresh cilantro for garnish
  • 2 cups cooked steamed rice

Instructions

1. Prepare the Crust:

  1. In a bowl, combine ground lamb, chopped onion, half the minced garlic, cumin, coriander, smoked paprika, salt, and pepper. Mix well and form into small meatballs (koftas).
  2. Heat olive oil in a large skillet over medium heat. Brown the koftas on all sides, about 5-7 minutes, then remove and set aside.
  3. In the same skillet, add the remaining garlic and sauté for 30 seconds. Stir in diced tomatoes, coconut milk, turmeric, cinnamon, and cayenne pepper. Bring to a simmer.
  4. Return the koftas to the skillet, cover, and simmer for 15-20 minutes until cooked through and sauce thickens slightly.
  5. Serve the koftas and sauce over steamed rice, garnished with fresh cilantro.

Notes

You can customize the seasonings to taste.
