For the Crust:
- 1 lb store-bought potato gnocchi
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 5 oz fresh baby spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 8 oz burrata cheese
- Salt and black pepper to taste
- Red pepper flakes (optional)
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil. Cook gnocchi according to package directions until they float, then drain and set aside.
- In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes.
- Stir in cooked gnocchi, heavy cream, and Parmesan cheese. Season with salt, pepper, and red pepper flakes if using. Simmer for 3-4 minutes until sauce thickens slightly.
- Tear burrata into pieces and place on top of the gnocchi mixture. Cover skillet and let melt for 2-3 minutes.
- Garnish with fresh basil and serve immediately.
