For the Crust:

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 cup chicken broth
  • 1/4 cup pitted Kalamata olives
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken thighs with salt, pepper, oregano, thyme, and rosemary.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown, about 3-4 minutes per side.
  3. Transfer chicken to a slow cooker, add garlic, lemon slices, olives, and chicken broth.
  4. Cover and cook on low for 6 hours or high for 3 hours, until chicken is tender.
  5. Garnish with fresh parsley before serving.
