For the Crust:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 lemon, sliced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 cup chicken broth
- 1/4 cup pitted Kalamata olives
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Season chicken thighs with salt, pepper, oregano, thyme, and rosemary.
- Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown, about 3-4 minutes per side.
- Transfer chicken to a slow cooker, add garlic, lemon slices, olives, and chicken broth.
- Cover and cook on low for 6 hours or high for 3 hours, until chicken is tender.
- Garnish with fresh parsley before serving.
