Description

Tender, juicy chicken cooked low and slow in a savory-sweet glaze made with brown sugar and crispy bacon, perfect for an easy weeknight dinner.

Ingredients

Scale

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 6 slices thick-cut bacon, chopped
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • Fresh parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. In a skillet over medium heat, cook the chopped bacon until crispy. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the skillet.
  2. Add brown sugar, soy sauce, minced garlic, smoked paprika, black pepper, chicken broth, and apple cider vinegar to the skillet. Stir over medium heat until the sugar dissolves and the mixture thickens slightly, about 3-5 minutes.
  3. Place chicken breasts in the slow cooker. Pour the glaze mixture over the chicken, ensuring it’s evenly coated. Sprinkle the cooked bacon on top.
  4. Cover and cook on low for 6 hours or on high for 3-4 hours, until chicken is tender and cooked through.
  5. Optional: For a caramelized finish, transfer chicken and glaze to a baking dish and broil for 2-3 minutes until bubbly and golden. Garnish with fresh parsley before serving.
