For the Crust:

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • For the frosting: 4 tbsp butter, softened
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy. Beat in egg and vanilla.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  4. Drop dough by rounded tablespoons onto prepared sheets. Bake for 10-12 minutes until edges are lightly golden. Cool completely.
  5. For frosting, beat butter and cream cheese until smooth. Gradually add powdered sugar and vanilla, beating until creamy. Frost cooled cookies.
