An artisanal take on the classic Caprese, with fire-roasted tomatoes and a crunchy pistachio finish.

For the Crust:
- 1 loaf of sourdough bread
- 2 large Roma tomatoes
- 8 oz fresh mozzarella cheese
- 1/4 cup pistachios, chopped
- Fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Slice the tomatoes, place them on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 20 minutes or until lightly charred.
- Slice the sourdough loaf and mozzarella cheese. Layer the bread with mozzarella slices, roasted tomatoes, and fresh basil leaves.
- Sprinkle the chopped pistachios over the top. Drizzle with olive oil and serve immediately.
