Description

An artisanal take on the classic Caprese, with fire-roasted tomatoes and a crunchy pistachio finish.


Ingredients

For the Crust:

  • 1 loaf of sourdough bread
  • 2 large Roma tomatoes
  • 8 oz fresh mozzarella cheese
  • 1/4 cup pistachios, chopped
  • Fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Slice the tomatoes, place them on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 20 minutes or until lightly charred.
  2. Slice the sourdough loaf and mozzarella cheese. Layer the bread with mozzarella slices, roasted tomatoes, and fresh basil leaves.
  3. Sprinkle the chopped pistachios over the top. Drizzle with olive oil and serve immediately.

Notes

You can customize the seasonings to taste.
