Description

A hearty, flavorful rice dish packed with ground beef, aromatic vegetables, and bold Cajun seasonings, finished with fresh herbs for a classic Southern comfort meal.

For the Crust:

  • 1 lb ground beef
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 medium onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp green onions, sliced
  • 2 tbsp vegetable oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if needed.
  2. Add onion, bell pepper, celery, and garlic to the skillet. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
  3. Stir in Cajun seasoning, smoked paprika, dried thyme, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Add rice and chicken broth, stirring to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat, fluff rice with a fork, and stir in fresh parsley and green onions. Let sit covered for 5 minutes before serving.
