For the Crust:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 1 tsp cumin
- Salt and black pepper to taste
- 1 cup cooked rice (white or brown)
- 1 cup hummus
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tbsp extra virgin olive oil
Instructions
1. Prepare the Crust:
- In a bowl, toss chicken pieces with 2 tbsp olive oil, minced garlic, smoked paprika, cayenne pepper, cumin, salt, and black pepper. Let marinate for 10 minutes.
- Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and slightly charred.
- In a separate bowl, combine diced cucumber, red onion, parsley, lemon juice, and extra virgin olive oil. Toss well to coat and season with salt and pepper.
- To assemble the bowls, divide cooked rice among four bowls. Top each with a scoop of hummus, spicy garlic chicken, and a generous portion of cucumber salad.
- Serve immediately, with extra lemon wedges if desired.
