Description

A vibrant and protein-packed bowl featuring tender, spicy garlic chicken served over fluffy rice, creamy hummus, and a refreshing cucumber salad.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 1 cup cooked rice (white or brown)
  • 1 cup hummus
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tbsp extra virgin olive oil

Instructions

1. Prepare the Crust:

  1. In a bowl, toss chicken pieces with 2 tbsp olive oil, minced garlic, smoked paprika, cayenne pepper, cumin, salt, and black pepper. Let marinate for 10 minutes.
  2. Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and slightly charred.
  3. In a separate bowl, combine diced cucumber, red onion, parsley, lemon juice, and extra virgin olive oil. Toss well to coat and season with salt and pepper.
  4. To assemble the bowls, divide cooked rice among four bowls. Top each with a scoop of hummus, spicy garlic chicken, and a generous portion of cucumber salad.
  5. Serve immediately, with extra lemon wedges if desired.

You can customize the seasonings to taste.
