For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust for heat)
- 1 tsp ground cumin
- Salt and black pepper to taste
- 1 cup uncooked white rice
- 1 cup plain hummus
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
Instructions
1. Prepare the Crust:
- In a bowl, combine chicken, 2 tbsp olive oil, minced garlic, smoked paprika, cayenne, cumin, salt, and pepper. Marinate for at least 15 minutes.
- Cook rice according to package instructions. Fluff with a fork and set aside.
- Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes until golden and cooked through.
- In a separate bowl, mix cucumber, red onion, parsley, lemon juice, and red wine vinegar to make the salad.
- To assemble bowls, divide rice among four bowls. Top with chicken, a scoop of hummus, and the cucumber salad. Serve immediately.
