A vibrant and healthy bowl featuring spicy garlic-marinated chicken, creamy hummus, and a refreshing cucumber salad.

For the Crust:

  • 1 lb boneless, skinless chicken thighs, cut into strips
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 1 cup hummus
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • Cooked quinoa or rice for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, mix olive oil, minced garlic, smoked paprika, cayenne, cumin, salt, and pepper. Add chicken strips and marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat. Cook the chicken for 6-8 minutes per side until cooked through and slightly charred.
  3. In another bowl, combine diced cucumber, red onion, parsley, and lemon juice. Toss to make the cucumber salad.
  4. To assemble, divide cooked quinoa or rice among bowls. Top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
  5. Drizzle with extra olive oil or lemon juice if desired and serve immediately.

You can customize the seasonings to taste.
