For the Crust:
- 1 lb boneless, skinless chicken thighs, cut into strips
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- Salt and black pepper to taste
- 1 cup hummus
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- Cooked quinoa or rice for serving
Instructions
1. Prepare the Crust:
- In a bowl, mix olive oil, minced garlic, smoked paprika, cayenne, cumin, salt, and pepper. Add chicken strips and marinate for at least 15 minutes.
- Heat a skillet over medium-high heat. Cook the chicken for 6-8 minutes per side until cooked through and slightly charred.
- In another bowl, combine diced cucumber, red onion, parsley, and lemon juice. Toss to make the cucumber salad.
- To assemble, divide cooked quinoa or rice among bowls. Top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
- Drizzle with extra olive oil or lemon juice if desired and serve immediately.
