Description

Crispy golden rice bites topped with creamy avocado and spicy tuna, finished with sesame seeds and scallions. A restaurant-style appetizer made at home!


Ingredients

Scale

2 cups cooked sushi rice (cooled)

1 tbsp rice vinegar

1 tsp sugar

1/2 tsp salt

8 oz sushi-grade tuna, finely diced

2 tbsp mayonnaise (Japanese Kewpie preferred)

12 tsp sriracha (to taste)

1 tsp soy sauce

1 avocado, thinly sliced

2 tbsp sesame oil (for frying)

2 tbsp vegetable oil (for frying)

1 tsp toasted sesame seeds

2 scallions, thinly sliced

Soy sauce, for serving


Instructions

1. Mix cooked rice with rice vinegar, sugar, and salt. Press rice into a parchment-lined pan about 3/4 inch thick. Chill 1 hour to firm.

2. Cut chilled rice into rectangles or squares.

3. Heat sesame oil and vegetable oil in a skillet over medium heat. Fry rice pieces until golden and crispy on both sides. Drain on paper towels.

4. In a bowl, combine diced tuna, mayonnaise, sriracha, and soy sauce. Mix until creamy and spicy.

5. Top each crispy rice bite with avocado slices and a spoonful of spicy tuna.

6. Garnish with sesame seeds and scallions. Serve with soy sauce for dipping.

Notes

Best eaten immediately while rice is crispy.

Chill rice well before cutting for clean shapes.

Swap tuna with salmon for variation.

Adjust spice level by adding more or less sriracha.
